Maximizing the freshness and flavor of food and merchandising it effectively are critical issues in foodservice. That is especially true in today’s scatter-system serving areas, where display and holding equipment with eye appeal and high performance is replacing old-fashioned institutional-looking pieces.

An on-trend example is the new Hatco® Flav-R-Savor® Curved Display case, a compact two-shelf unit with a distinctive curved front glass panel, attractive Swanstone® base shelf and a variety of designer exterior colors, not to mention Hatco’s signature convected air technology inside.

“Everyone is looking for Euro styling in equipment,” says Mark Ecker, western regional sales manager for Hatco Corporation in Milwaukee. “That’s the trend today.”

However, it is the Curved Display Case’s unique food holding capability, as much as its good looks, which make it an advantageous addition in B&I, healthcare and college and university feeding. “It works virtually anywhere you are displaying food and trying to give it a classier look,” says Ecker.

The convected air system of the Curved Display Case actually envelopes food with heated and humidified air. That enables longer holding times and fresher-tasting food compared to that of cases that rely merely on a heated base and an overhead heat source.

“Diffusers move the air gently around the product, maintaining the natural moisture and keeping it at a safe holding temperature,” Ecker says. “There is very even heat moving throughout the cavity.”

That makes it great for showcasing pizza, French fries, nachos and many other open foods on plates or in casserole dishes, hotel pans or open carriers. “In a lot of cases, having heat and humidity inside the display case will almost double your holding time compared to a dry holding cavity,” Ecker says. It also works well with wrapped items.

Other important features include a front sign holder, digital controls and a hinged front glass panel that tilts forward for easy cleaning.

In the back of the house, food holding needs are no less important. Another new Hatco® product, the Flav-R-Savor® Portable Holding Cabinet, is a versatile half-size holding cabinet with humidity capability that allows operators to hold foods longer while reducing their energy costs. Thanks to components such as a high-efficiency motor, fully insulated door, tight gasket and positive door latch, the unit is Energy Star-certified for energy efficiency.

The Portable Holding Cabinet is compact enough to fit on a cooking line and mobile enough for easy catering and banquet use. In addition, its universal slide system accommodates 12-inch by 20-inch, 18-inch by 26-inch and Gastronorm pans. “The slide handles every pan out there,” Ecker says.

For high-volume operations that cook and hold food in batches, the Portable Holding Cabinet really comes in handy. “It can work great even in a school environment,” says Ecker. “In a lot of cases they are turning students so quickly in these scatter-system lines that they can just pull out whole pans of product and rotate them accordingly.”

What’s more, the Portable Holding Cabinet also functions as a proof box for yeast-raised dough items. And from a maintenance standpoint, it generates humidity by heating the exterior of a water chamber, not by immersing a heating element in water, so calcium buildup is not a concern.

“This is a very flexible and versatile unit, especially because of all the pan configurations it holds,” Ecker says. “You can do meats, baked products, you name it—there is not a product it won’t hold.”
