April 23—Last week at Mary Baldwin College, in Staunton, Va., dining services held a "Sustainability Today" event to bring awareness to local purchasing.
The dining hall use the day to showcase as much locally-produced product as possible. The dining hall chef teamed up with a Staunton restaurant to bring the local food to the college. The idea was to help students branch out to try new foods and that can also support local farmers.
