The five teams, each composed of a chef and a foodservice director, will compete Aug. 25 during HFM's annual Leadership Conference, at the Renaissance Esmerelda Resort in Indian Wells, Calif.
The teams are: David Reeves, director, and James Roth, chef, Elmhurst (Ill.) Memorial Hospital; Angelo Mojica, director, and Shawn Dolan, chef, UNC Healthcare, Chapel Hill, N.C.; Lisa Poggas, director, and Daniel Skay, chef, Parker (Colo.) Adventist Hospital; Lori Corbin, manager, and Chad Nurminen, chef, SMDC Health System, Duluth, Minn., and Susan Clarot, regional manager, and Muni Nadan, chef, Memorial Hospital Modesto, Modesto, Calif.
Teams submitted original dishes using a five-ounce Tyson flat-iron steak as the center of the plate item. The finalists were selected from a group of 20 entrants. The finalists will prepare their submitted recipes in a timed competition.
