The wheat grass was the featured decoration during the university’s
annual Easter Brunch. The wheat grass was planted the week following
spring break, and since then Dr. Patricia Saunders, professor of
biology and toxicology, and student Martin Dria had been tending the
wheat grass in the greenhouse. Valerie Zeno, catering manager, used the
grass as décor at the brunch by potting the grass and putting dyed
Easter eggs on top.
The two departments hope to collaborate again,
possibly to grow herbs to use as part of dining’s sustainability
program.
