Zahtar Dip

Olive oil is infused with a flavorful blend of seasonings. The oil is then used as a dip for crusty bread or vegetables, or for flavoring meat.

Ingredients

5 tbsp. sesame seeds
5 tbsp. fresh thyme leaves
2 tbsp. fresh oregano leaves
1 tbsp. fresh marjoram leaves
Salt, as needed
4 tsp. sumac
1⁄2 cup good quality olive oil

Methods/Steps

1. In a small pan, toast sesame seeds over medium heat until color is light gold. Transfer seeds to a bowl and cool.

2. Whisk together thyme, oregano, marjoram, salt, sumac, and olive oil in a large bowl until blended.

3. Allow zahtar dip to stand in refrigerator for 3-4 days for maximum flavor. Serve with fresh vegetables, crusty bread, or as infused oil for meat
and fish.
