Watermelon and Heirloom Tomato Salad

Ingredients

2 organic watermelons, peeled and cut into chunks
8 local heirloom tomatoes of various colors, cut into chunks
24 mint or basil leaves
2 tbsp. red onion, sliced paper thin
4 tbsp. extra virgin olive oil
2 tbsp. white balsamic vinegar
Coarse sea salt, to taste
Pepper, to taste
Crumbled feta cheese, optional

Methods/Steps

  1. Arrange watermelon and tomatos on serving plate or in bowl. Sprinkle with mint or basil and red onion.
  2. Drizzle with olive oil and vinegar. Season with salt and pepper to taste and sprinkle feta cheese on top, if desired.
