Ingredients

10 oz. sweet onion, diced
1-2 tsp. fennel seed
5 oz. port wine or cider vinegar
1/2 lb. fresh cantaloupe, peeled and diced

Methods/Steps

  1. In small saucepan combine onion, fennel seed and port or vinegar. Place over med. heat; reduce by half.
  2. Set aside until cool. Fold cantaloupe into mixture by thirds.
  3. Refrigerate and serve cold.
