Tender peas and rice are a great base for this delightful salad. Zesty lemon, refreshing mint and tangy feta cheese all provide a great flavor mix.
1. In a bowl, whisk together shallots, mint, cilantro, olive oil and lemon juice. Season to taste and reserve.
2. Brush scallions with olive oil and grill, turning, for approx. 3 min. Season and slice into 1-in. pieces. Reserve.
3. In a large bowl, combine rice, scallions, peas and feta. Drizzle with vinaigrette, garnish with cilantro and serve.
