Pork Sandwich

Sliced pork piled high on foccacia bread makes a simple and hearty sandwich. The pork is full of flavor from an aromatic marinade and tender from slow cooking.

Ingredients

1 cup olive oil
1⁄2 cup apple wine
4 tbsp. black peppercorns, crushed
4 shallots, minced
8 tbsp. fresh rosemary, chopped
2 garlic cloves, crushed
2 bay leaves, chopped
6 lb. pork loin
Focaccia bread, as needed

Methods/Steps

1. In a large bowl, whisk together oil, wine, peppercorns, shallots, rosemary, garlic and bay leaves. Pour over pork loin and marinate overnight.

2. Remove pork from marinade and roast uncovered in a 400° F. oven for 15 min. Reduce heat to 325° F. and bake another 90 min. or until done.

3. Remove pork from heat and allow to cool. Slice thinly and stack on focaccia bread with condiments. Serve.
