A baked turkey meatball that is both moist and tender, is served with a tangy plum sauce. Add rice on the side to make sure not a bit of the sauce is left behind.
1. In a food processor, combine prunes and hot water. Pulse until prunes are finely chopped and forms a puree. Reserve.
2. In a large bowl, combine 2 tsp. plum puree with remaining ingredients. Form into 1-oz. meatballs. Bake, on sheet pan, in a hot oven 18-22 min. until cooked.
