Shallots, smoked trout, pea shoots and orzo are combined in a cream sauce to create an appetizer that's finished in mere minutes. It requires little prep and even less cooking time.
1. Melt butter in large sauté pan. Add shallots and cook until soft, about 5 min.
2. Add trout and stir to coat well with the other ingredients.
3. Stir in cream and bring to a simmer; cook until slightly reduced and thickened. Add 3 oz. pea shoots; cook until wilted. Stir in orzo to heat through; season with pepper.
4. For service, portion orzo onto small plate; garnish with remaining pea shoots.
