A steaming bowl of this creamy soup is satisfying and delicious. The delicately sweet flavor of the squash is enhanced by the fragrant cumin and spicy pepper.
1. Sauté onion in butter until soft; stir in garlic and squash.
2. Add stock, cumin, salt, and cayenne pepper. Simmer until squash is very soft.
3. Puree. Mix in cream and honey.
4. Garnish with a dollop of sour cream and 1⁄2 tsp. cilantro.
