Fried Green Tomato Panini

Thick slices of tomato in a crisp cornmeal coating are delicious nestled inside ciabatta rolls. Mozzarella, and red pepper mayonnaise finish up this satisfying sandwich.

Ingredients

4 large green tomatoes, sliced 1⁄2-in. thick
1⁄2 cup flour
2 eggs, lightly beaten
1 cup cornmeal
Salt and pepper, to taste
Olive oil, as needed
8 individual ciabatta rolls
1⁄2 cup red pepper mayonnaise
1 1⁄2 lb. fresh mozzarella, sliced
Red leafed lettuce, as needed

Methods/Steps

1. Dredge tomatoes in flour, eggs, and cornmeal. Season with salt and pepper.

2. In a large sauté pan, heat oil and fry tomatoes until lightly brown on both sides.

3. Spread mayonnaise and two slices of tomatoes on each panini. Top with cheese, and lettuce.
