A Fairy’s Fruit Salad

This fun salad features kiwi, apple, mango, fresh mint, honey, orange juice and plain Greek yogurt all nestled in a waffle cone.

Ingredients

1⁄2 cantaloupe, peeled, seeded, diced into 1⁄2-in. cubes
1⁄2 honeydew melon, peeled, seeded, diced into 1⁄2-in. cubes
1⁄2 pint strawberries, stems removed, diced into 1⁄2-in. pieces
1⁄2 pint blueberries
3 kiwis, peeled, diced into 1⁄2-in. cubes
1 apple, peeled, diced into 1⁄2-in. cubes
1 mango, peeled, diced into 1⁄2-in. cubes
1 tbsp. minced fresh mint
1 tsp. honey
4 oz. freshly squeezed orange juice
4 oz. plain Greek yogurt
10 waffle cones
 

Methods/Steps

1. In large bowl, combine all fruit.

2. In smaller bowl, combine mint, honey, orange juice and yogurt. Mix well and pour over fresh fruit. Mix to combine.

3. Place fruit salad in refrigerator for approximately 1 hour to chill.

4. Scoop 5-oz. portion into each waffle cone.
