A flavor explosion is the result of this sweet and spicy ceviche made with salmon, shrimp, scallops and whitefish as well as green and gold kiwifruit, and lime and orange segments.
1. In large bowl, combine shrimp, salmon, scallops, white_fish, red onion, jalapeño peppers, red pepper flakes, and lime juice. Refrigerate 2-3 hr.
2. Just before serving, drain off excess lime juice. Stir tomatoes, cilantro, sugar, and salt and pepper into seafood mixture. Care_fully add in the kiwifruit and lime and orange segments; gently mix.
