Chopped Antipasto Salad

An Italian chopped salad, featuring cubed pepperoni and cheeses, fresh tomatoes, roasted peppers, chickpeas, hot and sweet pepper rings and garlic-oregano vinaigrette. A zesty taste of Italy in every bite.

Ingredients

8 cups chopped romaine lettuce
1 cup diced roasted peppers
1⁄2 cup hot and sweet pepper rings, mixed
1 1⁄2 cups cubed pepperoni
2 cups cubed Provolone, Swiss, and mozzarella, mixed
1 cup marinated mushrooms
1 cup chickpeas
1⁄2 cup sliced black olives
Garlic-oregano vinaigrette or other vinaigrette, for service

Methods/Steps

Mix all ingredients except vinaigrette together. Divide into eight portions and serve, accompanied by dressing.
