Ingredients

Idaho® Potatoes, cut into wedges - 3 ea.
3 Tbsp. Olive oil
Salt - to taste
Pepper - to taste
2 Tbsp. Butter
1-1/2 tsp. Original TABASCO® brand Pepper Sauce
1/2 cup Parmesan, grated
1/4 cup Scallion, chopped

Methods/Steps

  1. Toss potatoes in olive oil to coat completely. Season with salt and pepper. Lay flat on a large cookie sheet pan and place in a 425°F oven. Bake for 20-25 minutes, until potatoes are golden brown and tender.

  2. While potatoes are baking, combine butter and Original TABASCO® Pepper Sauce in a small sauce pot and warm over low heat until butter is melted.

  3. Remove potatoes from oven and brush with butter-TABASCO® mixture. Sprinkle generously with Parmesan cheese and scallions.
