California Avocado and Summer Fruit Salad

Rich avocados make this salad full of flavor. The salad also features cantaloupe, honeydew melon, papaya, pears and strawberries.

Ingredients

1 cantaloupe
1 honeydew melon
1 papaya
2 or 3 pears, peeled, halved, cored, cut into desired shape
1 cup hulled strawberries
4 medium ripe California avocados, halved, pits removed

1 ripe California avocado, mashed
2 tbsp. fresh lemon juice
1⁄2 tsp. salt
1⁄2 cup fresh orange juice
2 tbsp. honey
1⁄2 cup mayonnaise
Dash Tabasco sauce (optional)

Methods/Steps

1. Cut fruits into complementary shapes (cubes, dice and balls) and toss together. Spoon into ripe avocado halves.

2. In food processor or blender, blend mashed avocado and lemon juice. Add remaining ingredients and blend until smooth. Serve with avocado/fruit halves.
