Pork and fruit always pair well. This unusual combination of bluberries and tomatoes with carmelized onions makes a delicious and zippy flavored sauce for the tender pork.
1. In a large skillet over medium-high heat, melt the butter and sauté the onions until golden brown. Add sugar and cook 3 min. more to caramelize onions.
2. Add port, vinegar, blueberries, and tomatoes. Bring mixture to a boil, then remove from heat. Season to taste and reserve.
3. Season tenderloin and cook under broiler until desired doneness. Thinly slice tenderloin and serve with sauce.
