Avocado Fruit Salad with Lemonade Dressing

This fruit salad, seasoned with lime juice and chili powder, was inspired by the fresh fruit on a stick sold on the streets of Mexico. The savory-sweet combination, tied together with a tangy lemonade dressing, makes for a refreshing mid-day snack that’s packed with health.

Ingredients

¼ cup fresh lemon juice
4 tsp. honey
¼ tsp. ground chile piquin, (optional)
¾ cup fresh pineapple cubes (3/4-in.)
¾ cup fresh papaya cubes (3/4-in.)
¾ cup fresh quartered strawberries
¾ cup peeled jicama cubes (1/2-in.)
1 med. jalapeno, seeded and finely chopped
2 tbsp. coarsely chopped mint
1 firm-ripe avocado, halved, pitted, peeled and cut into ¾-in. chunks

Methods/Steps

1. In med. bowl, whisk together lemon juice, honey and chile piquin.

2. Add pineapple, papaya, strawberries, jicama, jalapeno and mint. Stir until evenly coated with the lemonade dressing.

3. Gently fold in avocado and serve.
