A brightly flavored pesto is a terrific topping for angel hair noodles. Peanuts, garlic, mint and cilantro, with lemon juice and vinegar combine to make this zesty sauce.
For pesto:
1 1⁄2 cups dry roasted peanuts
4 garlic cloves
1⁄4 cup gingerroot, grated
2 cups mint leaves
3 cups cilantro leaves
1⁄2 cup Pecorino Romano
3 tbsp. lemon juice
2 tbsp. lemon zest, grated
1 cup vegetable oil
1⁄4 cup rice wine vinegar
2 lb. angel hair pasta, cooked and rinsed
1 1⁄2 lb. chicken breast, grilled and cut into 1-in. strips\
For garnish:
1 cup mung bean sprouts
1 cup cilantro sprigs
1 cup shredded carrot
1⁄2 cup dry roasted peanuts, chopped
1. In food processor, blend pesto ingedients until smooth.
2. Toss pesto and pasta. Add chicken strips. Garnish with sprouts, cilantro, carrots, and peanuts, if desired.
