Asian spices take center stage in these robust crepes. Salmon is stir-fried with vegetables, five-spice powder, and a ketchup, soy sauce and honey mixture.

Ingredients

Crêpes:
3 cups flour
2 eggs
3 3⁄4 cups milk
1 tsp. salt

Sauce:
1 cup ketchup
1⁄2 cup soy sauce
2 tbsp. honey
2 tbsp. cornstarch

Filling:
1⁄2 cup vegetable oil
4 lb. stir-fry vegetables
2 tsp. five-spice powder
2 pouches (3.3 lb. each) salmon, drained, or 7 lb. cooked salmon
Sesame seeds, for garnish
 

Steps

1. Blend crêpe ingredients. Ladle 1 oz. batter into heated crêpe pan; cook 1 min; flip over. Repeat for 48 crêpes.

2. Combine sauce ingredients.

3. Heat oil in wok; add vegetables and stir-fry. Stir in sauce mixture and spice powder until slightly thickened. Add salmon; heat through.

4. Portion salmon mixture onto each crepe; roll up. Sprinkle with sesame seeds.
