Veggie Panini on Herb Flatbread
Herb flatbread topped with tomato, lettuce, cucumber, red bell pepper, onion, spinach and feta makes for a great option for vegetarian panini lovers.
2 oz. avocado dressing
2 pieces herb flatbread
1 leaf lettuce
4 1⁄4 -in.-thick slices tomato
4 1⁄4 -in.-thick slices cucumber
4 1⁄4 -in.-thick slices red bell pepper
4 1⁄4 -in.-thick red onion rings
1 oz. crumbled feta cheese
1 tbsp. chopped cilantro
1 oz. baby spinach leaves
1. Equally distribute avocado dressing on flatbread. Cover bottom slice of flatbread with lettuce and tomatoes. Top tomatoes with cucumber slices, red bell pepper and red onion rings.
2. Equally distribute feta cheese, cilantro and spinach leaves over onions. Top with remaining flatbread.
3. Place in panini grill to warm bread and make aromatic, about 2 minutes.
4. Cut in half diagonally. Serve immediately.
