Vegetable Pesto Mashed Potato Bowl
Rich, creamy Potato Pearls® Mashed Potatoes topped with zucchini and peppers along with a drizzle of pesto sauce.
Ingredients
1 c Potato Pearls® or Potato Pearl® EXCEL® Mashed Potatoes, prepared
½ c Bell peppers, red/yellow
1 Tbsp Pesto sauce, prepared
1 sprig Basil
½ c Zucchini, diced
Steps
- Prepare Potato Pearls® according to package directions.
- Steam or saute zucchini and bell peppers until tender.
- Place 1 cup potatoes in 16 oz. container and drizzle 1 Tbsp pesto over potatoes. Place ½ cup zucchini and ½ cup bell peppers over potatoes.
- Garnish with basil sprig.
