Honey, sugar and cream and ricotta cheeses are mixed together and layered with fresh fruit in this delightfully fluffy dessert.
2 cups whole-milk ricotta cheese
4 oz. cream cheese, softened
3 tbsp. honey
2 tbsp. sugar
1⁄2 cup orange liqueur
4 cups mixed fresh fruit (blackberries, raspberries, mango, seedless grapes or star fruit)
2 tbsp. lime juice
1. With an electric mixer, whip ricotta, cream cheese, honey and sugar until smooth. Blend in 2 tablespoons orange liqueur. Refrigerate until service.
2. Toss fruit with lime juice; add remaining orange liqueur and marinate 30 minutes.
3. For service, spoon some of fruit mixture into parfait glass or brandy snifter; top with ricotta mixture and more fruit.
