The basil salsa takes this turkey sandwich from just a standard menu item to a really terrific tasting sandwich. Serving it on focaccia adds to the goodness.
4 plum tomatoes, seeded and diced
2 cucumbers, peeled, seeded and diced
4 tbsp. green onion, chopped
1 cup fresh basil, chopped
2 lemons, zested
4 tbsp. lemon juice
2 tbsp. olive oil
2 tsp. garlic, minced
4 8-oz. focaccia loaves
8 lettuce leaves
1 1⁄2 lb. smoked turkey, shaved
8 oz. provolone cheese, shaved
1. In a bowl, combine tomatoes, cucumbers, green onion, basil, lemon zest and juice, oil and garlic. Mix well and season to taste. Reserve refrigerated, at least 1 hr.
2. On half the focaccia, layer lettuce, turkey, basil salsa and cheese. Top with remaining
focaccia and cut into 12 wedges.
