A great relish to have on hand, this flavorful combination of chopped tomatoes, onions and garlic is good with fish. It stores well in the refrigerator.
1⁄3 cup red wine vinegar
2 cups chopped red onions
4 cloves garlic, thinly sliced
4 lb. Florida tomatoes, cored and chopped
1⁄2 cup chopped fresh basil
1 tbsp. each ground cumin, ground coriander, ground mustard seed
2 tbsp. salt
1⁄4 tsp. ground black pepper
1⁄3 cup olive oil
1. In a saucepan, bring vinegar to simmer. Add onions and garlic; simmer until softened, 3-5 min.; cool.
2. Combine tomatoes with basil, spices, and olive oil; stir in onion mixture. Cover and refrigerate until ready to use. Serve over grilled fish.
