Quick and simple vegetarian dish with broccoli, water chestnuts, carrots, lo mein noodles, diced firm tofu and Asian vegetable fruit sauce. Serve with pineapple chunks, berries, or steamed snow peas.
2 tbsp. vegetable oil
1⁄2 cup raw broccoli florets
1⁄2 cup drained water chestnuts
1⁄2 cup shredded carrots
1 lb. packaged lo mein noodles, cooked al dente and drained
3⁄4 cup diced firm tofu
1⁄2 cup Asian vegetable fruit sauce
1. In a wok or large sauté pan, heat oil over med.-high heat.
2. Add broccoli and water chestnuts; stir-fry until broccoli is tender-crisp.
3. Stir in carrots and noodles. Add tofu and sauce; stir thoroughly. Cook until heated through.
4. Serve with your favorite sides, such as pineapple chunks, berries, or steamed snow peas.
