Three-Cheese Country Ham Cheesecake
This savory cheesecake is full of flavor. Three cheeses and ham make it a tantalizing delight.
6 tbsp. butter, melted
3 cups crackers, ground
1 cup freshly grated domestic Parmesan cheese
4, 8-oz. packages cream cheese, room temperature
7 large eggs
2 cups grated domestic Swiss
1 cup 1/2-in. cubed ham
1/3 cup chopped fresh chives
1 tsp. salt
1/4 tsp. ground white pepper
1. Brush 9-in. springform pan with 1 tbsp. melted butter.
2. Mix cracker crumbs, Parmesan, and 5 tbsp. melted butter. Reserve 1/2 cup crumb mixture; press remainder onto bottom and up sides of pan.
3. Beat cream cheese and eggs until smooth. Mix in remaining ingredients. Pour filling into crust. Sprinkle reserved 1/2 cup crumbs over.
4. Place on sheetpan and bake at 350°F until filling no longer moves in center when pan is gently shaken, about 2 hr. Cool 30 min.
