This easy no-cook peanut sauce has an authentic Thai taste and is perfect as a dipping sauce for chicken, shrimp, and beef... or even to use tossed with warm cooked noodles for a quick pasta dish.
3 cups chunky-style peanut butter
1 1⁄2 cups honey
1 1⁄2 cups coconut milk
1⁄3 cup lime juice
3 tbsp. fish sauce
1 tbsp. red chile sauce
1 1⁄2 tbsp. garlic, finely chopped
1. In a large bowl, or in a food processor, combine all ingredients until well-blended. Refrigerate, covered, overnight to marry flavors. Serve at room temperature as an accompaniment to grilled meat and poultry (skewers), seafood, or as a dip for vegetables.
