Sweet Potatoes Candy Roasted

This recipe was developed to meet the new school meal regulations. Sweet potatoes are baked with honey or maple syrup, brown sugar, chili powder, olive oil and black pepper.

Ingredients

40 lb. sweet potatoes
2 cups honey or maple syrup
1 ½ cups brown sugar
1 cup olive oil
½ cup chili powder or taco seasoning
1 tbsp. black pepper
1 tbsp. kosher salt
1 tbsp. crushed red pepper flakes

Steps

1. Peel sweet potatoes and dice into large cubes.

2. In large mixing bowl, add all ingredients and mix thoroughly until potatoes are covered with oil and seasoning.

3. Preheat oven to 350°F. Spread potatoes on large sheet pans sprayed with pan coat. Roast potatoes for 35 to 40 minutes, until done.

The University of Notre Dame in South Bend, Ind., will soon switch over from magnetic strip-based student ID cards to chip-based ones, The Observer reports.

Along with being more secure, the new cards will allow students easier access to dining halls, enabling them to simply tap their cards on a reader to gain entrance. Students will also be able to add flex points and Domer Dollars—which can be used at eateries on and off campus—to their accounts via a mobile app.

The new cards are expected to be available by the time school begins next fall.
