Spicy Turkey Empanadas

A tantalizing mix of turkey, seasonings, raisins and olives fill these plump baked savory pastries. They are great eaten out of hand as an appetizer.
Ingredients
1 lb. turkey meat, poached, shredded
1⁄3 cup chipotle chiles in adobo sauce, pureed
1 cup corn
3⁄4 cup green olives, chopped
1⁄2 cup raisins
3-3 1⁄2 cups flour
1 tsp. salt
1⁄2 cup vegetable oil
1⁄2 cup cold water
Steps
1. In a saucepan, combine turkey, chipotle peppers, corn, olives and raisins. Add enough water to thin slightly and warm over medium heat. Set aside.
2. In a bowl, mix together 3 cups flour and salt. Add oil and water slowly, until incorporated, and knead dough until elastic.
3. Dust surface with remaining flour, as needed. Roll dough to 1⁄8 -in.; cut out circles. Place turkey mixture in the center of each; fold over to form half-moon. Seal edges with a fork.
4. Bake at 350° F. until golden-brown.
