This salad features whole-grain rice, grilled chicken, Thai peanut sauce, chopped roasted peanuts and precut coleslaw mix for an easy taste of Asian fare.
3 qt. precut coleslaw mix
11⁄2 qt. cooked long, medium or whole-grain brown rice
12 oz. grilled chicken strips, cut into 1⁄2-in. pieces
1 cup cilantro leaves
3 cups prepared Thai peanut sauce
1⁄3 cup peanut or vegetable oil
1⁄3 cup water
11⁄2 cups chopped roasted peanuts
1. In large bowl, combine slaw mix, rice, chicken and cilantro. Toss to mix.
2. In another bowl, whisk together peanut sauce, oil and water. Add to rice mixture and toss to coat well.
3. Cover and chill at least 1 hour before serving. Serve 1 cup salad garnished with chopped peanuts.
