Southwestern Radish Cobb Salad
Simply delicious cobb salad with sliced radishes, hard-cooked eggs, kidney beans, corn, jack cheese and an Orange Vinaigrette dressing.
2 cups prepared salsa
1 cup orange juice
1⁄4 cup cider vinegar
2 tsp. orange peel, grated
12 cups iceberg lettuce, cut in 1-in. chunks
3 cups radishes, sliced
6 hard-cooked eggs, cut into wedges
2 cans red kidney beans, rinsed and drained
2 cans corn kernels, drained
2 cups jack cheese, cut in 1⁄2-in. cubes
1 cup crumbled bacon
1⁄2 cup scallions, sliced
1. In a small bowl, combine salsa, orange juice, vinegar and orange peel until well blended. Reserve.
2. In a large bowl, combine remaining ingredients. Toss thoroughly with reserved dressing and serve.
