Smoked Cheddar Cheeseburger

This burger was developed for Michigan State's food truck, Eat at State ON-THE-GO. It features two types of cheddar cheese and Roma tomatoes.

Ingredients

1 4-oz. beef patty
1 tsp. Mesquite seasoning
1 tbsp. sharp cheddar cheese
2 tbsp. smoked cheddar cheese
2 slices Roma tomatoes
1½ tbsp. thinly sliced red onions
¼ cup spring mix lettuce
1 tbsp. unsalted butter
Hamburger bun 

Steps

1. Place beef patty on 350ºF flattop grill. Sprinkle with mesquite seasoning. Cook for 3 minutes.

2. Flip patty. Sprinkle with mesquite seasoning. Top with both sharp cheddar and sharp cheddar cheese. Cover with grill lid and squirt a little water onto the grill to steam and melt cheese.

3. Meanwhile, melt butter on flattop and toast buns until golden brown.

4. Assemble burger: bottom bun, beef patty, Roma tomatoes, sliced onions, spring mix, top bun.

The University of Maryland will begin offering weekly specials at all of its dining halls this semester, The Diamond Back reports.

The weekday specials will allow Dining Services to offer past menu items that students miss as well as new dishes students have been requesting, according to a spokesperson.

Students can find out which specials are being offered each week via dining hall table tents as well as through Dining Services’ social media. During select weeks, the specials may reflect a particular theme, such as Taste of the South.

We saw in 2016 that many operators were trying to have some type of display cooking in their food operation. We installed a hibachi grill this fall, and within three months we had 300 residents and guests make reservations. We also use our hibachi grill for cooking classes twice a month, where our hibachi chef Abby Kramer does an excellent job teaching different cuisines. We have received so many compliments that we have decided to get another hibachi grill for a different dining venue in 2017.
