Inspired by local ingredients found near James Madison University, in Harrisonburg, Va., this sandwich features apple cider marinated chicken, apples, caramelized onions and cheddar cheese.
2 slices whole-grain white bread
4 oz. apple cider marinated chicken
1 oz. red delicious apple, sliced
2 slices mild cheddar cheese
1 oz. caramelized onions
1 oz. honey mustard
1. Marinate and cook chicken. Combine chicken with caramelized onions.
2. Place cheddar cheese on each slice of bread and put chicken and onions inside sandwich. Toast on Panini machine until cheese is melted.
3. Serve with honey mustard and a side of fried pickles.
