David Ludwig, director of food service, Manheim (Pa.) Central School District, says: “This is a recipe that my mother would make in the summer. Growing up, my family always had a large garden located at my grandparents’ home. Around the end of June we would pick sweet corn by the wheelbarrow loads. Family members would sit out in the backyard and clean and cut corn off the cobs all afternoon. Although much of the corn was frozen for later use, my mother would always save some for Corn Fritters. I still look forward to making these every summer.”

Ingredients

2 cups flour
3 tsp. baking powder
1 tsp. salt
1 egg, beaten
1 cup milk
2 large ears fresh corn, shucked

Steps

1. Mix all ingredients together, except corn.

2. Add about two large ears of fresh corn. Drop by spoonfuls in hot oil.

3. Serve with syrup.

Note: You can also add diced apples to this recipe for apple fritters.
