Potato Pearls® EXCEL® Mashed Potatoes infused with lemon and garlic topped with all of the traditional potato salad ingredients create a unique twist to the classic dish.

Ingredients

1 pkg Potato Pearls® EXCEL® Original Recipe Mashed Potatoes
4 c Corn (canned or grilled)
½ c Lemon juice, fresh
19 ea Pickle Spears
1 Tbsp Garlic, crushed
3 c Sauerkraut, drained
2 Tbsp Parsley, finely chopped
4 c Ham, low sodium, diced
10 each Hard-boiled eggs, halved or diced
2 c Sour cream
5 ea Tomato, diced
1 tsp Salt
1 tsp Pepper

Steps

  1. Prepare Potato Pearls® EXCEL® Original Recipe Mashed Potatoes according to package directions. Cool completely.
  2. Add lemon juice, parsley, garlic and crushed black pepper and mix completely using a whisk.
  3. Assemble individual serving bowls similar to a cobb salad: 1 cup Potato Pearls® Mashed Potatoes topped with, ¼ cup ham, ½ hard-boiled egg, 2 Tbsp tomato, ¼ cup corn, 1 pickle spear, ¼ cup sauerkraut, 1 Tbsp sour cream.
