Pear-Cherry Cobbler
A mouth-watering combination of fruits baked in a buttery crust. The aroma as it bakes is enticing. A welcome dessert, served warm.
Ingredients
Fruit Filling:
2 1⁄2 lb. ripe pears, peeled, cored, and sliced
1 lb. frozen sweet cherries, thawed, drained
3⁄4 cup sugar
3 tbsp. cornstarch
1⁄4 tsp. cinnamon
2 tbsp. butter, diced
Biscuit Topping:
1 1⁄2 cups flour
6 tbsp. sugar
1 1⁄2 tsp. baking powder
1⁄2 tsp. baking soda
1⁄2 tsp. salt
6 tbsp. chilled butter, diced
1⁄2 cup buttermilk
Melted butter
Steps
- Combine all Fruit Filling ingredients except butter. Mix well and divide in eight 8-oz. ramekins; dot with butter. Bake in 425°F oven 18 min.
- For Topping, combine flour, sugar, baking powder, soda, and salt. Blend in chilled butter until mixture resembles coarse meal. Add buttermilk to form dough.
- Mound dough over filling and brush with melted butter; sprinkle with sugar and cinnamon. Bake 10 min., until golden.
