Omar & Craig’s Guajillo Rub

This Guajillo Rub was created by Craig Mombert, executive chef at Davidson College, in North Carolina, when his department started making beef barbacoa. Omar Rodriguez, one of Mombert's chefs,experimented with the rub to replicate the flavors his family has enjoyed. Rodriguez wanted it authentic, using only guajillo and ancho chilies and Mexican oregano.


1⁄2 cup ground ancho chili spice
4 oz. powdered guajillo chilies
1⁄2 cup onion powder
1⁄2 cup whole Mexican oregano
1⁄4 cup ground cloves
1⁄2 cup ground cumin
1⁄2 cup salt
1⁄4 cup ground black pepper


1. Combine all ingredients, mix well. Store in airtight container.

Students at the University of Michigan in Ann Arbor will be served student-grown produce from the campus farm at dining halls this fall, M Live reports.

The dining team received its first batch of produce from UM’s on-campus farm in June, after students received the proper USDA certification to grow, harvest and deliver food to campus dining halls. In order to figure out what produce is needed, students communicate with the dining department weekly, and Michigan Dining purchases items accordingly.
