This simple potato salad gets its name and flavor from the Old bay seasoning Chef Aaron Rothgeb adds. And if you want to make it more upscale—and more New England-like, Rothgeb suggests tossing in a cup of cooked lobster meat.
Ingredients
2 lbs. diced redskin potatoes
1/2 lb. salted butter
1 rib celery, small dice
3.5 tsp. Old Bay seasoning
1/4 cup mayonnaise
1/2 tsp. yellow mustard
salt and pepper, to taste
Steps
- Steam potatoes and butter together until fork tender. Let cool.
- Combine potatoes with rest of ingredients. Taste and adjust seasonings as needed.
