Pickling vegetables is easy with this traditional Romanian recipe.
Ingredients
1 red pepper, cut into large strips
1/2 head red cabbage, quartered
1 head cauliflower florets
1 eggplant, peeled, cut into 2-in. dice
1 carrot, cut into 3-in. sticks
1 cucumber, seeded, cut into 3-in. sticks
3 tomato, quartered
1 horseradish root, cut into 3-in. sticks
3 cups white sugar
1 cup salt
4 cups white vinegar
1 gal. water
3 tbsp. mustard seed
6 garlic cloves, whole
1 onion, julienned
4 bay leaves
6 to 8 thyme springs
1 tbsp. peppercorn
Steps
- Cut vegetables and set aside.
- Combine sugar, salt, vinegar and water in large stockpot. Bring to a boil then set aside to cool.
- In large terra cotta pickling vessel or large canning jars, layer vegetables evenly.
- Top vegetables with mustard seed, garlic cloves, onion, bay leaves, thyme and peppercorn. Pour pickling liquid over top of vegetables.
- Cover and store in refrigerator for 72 hours.
