Lobster Salad Roll-Up
A simple classic with mixed lobster meat, mayonnaise and celery, then spread over flat bread with lettuce and tomato.
2 lb. lobster meat, thinly sliced
1 cup mayonnaise
4 celery stalks, finely chopped
8 pieces flat bread
4 tomatoes, thinly sliced
2 cups lettuce, shredded
1. In a medium bowl, combine lobster meat, mayonnaise and celery. Season to taste and chill 30 min.
2. Spread lobster salad over flat bread. Top with tomato and lettuce. Roll up bread around the filling and cut on the bias.
