Add spice to traditional hashbrowns with fresh salsa made with avocados, red onion and jalapenos. Serve it for breakfast or as a dinner side.
1/2 carton Golden Grill Russet Premium Hashbrown Potatoes
4 ripe avocados, medium dice
1 cup red onion, peeled, small dice
1/4 cup garlic cloves, minced
1 1/2 cup Roma tomatoes, medium dice
1/4 cup cilantro, rough chopped
2 jalapeños, seeded, deveined, minced
1 1/2 tsp. kosher salt
1 1/2 tsp. ground black pepper
2 tsp. cumin seed, toasted, ground
2 each lime juice and zest
1. Prepare potatoes according to package directions.
2. In medium bowl add all other ingredients, mixing just enough to incorporate and remain chunky. Taste for seasoning.
3. On preheated and greased griddle add potatoes and cook on one side until golden brown. Place potatoes in serving pan and top with salsa; serve immediately.
