A creamy avocado-lime mayonnaise pulls crunchy jicama and carrots together in this brightly flavored salad.
2 avocados, mashed
1⁄2 cup mayonnaise
1⁄4 cup fresh lime juice
Salt and pepper
2 jícamas, julienned
5 carrots, julienned
1 bunch cilantro, chopped
1 1⁄2 cups queso añejo (or other mild Spanish cheese), finely chopped
1. In a blender or food processor, combine avocados, mayonnaise, and lime juice. Blend until smooth, adding more mayonnaise or lime juice, if desired. Season with salt and pepper.
2. In a large bowl, mix together jícama, carrots, and cilantro until combined. Add avocado mayonnaise until vegetables are completely coated.
3. Top slaw with generous amount of cheese and serve.
