Gourmet Dining’s hydration station offers a variety of different takes on agua frescas. To make each variety, simply add the ingredients to a container with ice and water. 

Ingredients

· Citrus ginger- 2 lemons sliced, 2 limes sliced, 2 oranges sliced, 2 oz. peeled, sliced ginger 
· Orange- 6 oranges sliced
· Cilantro lime-1/2 bunch washed, rough chopped cilantro, 6 limes sliced
· Mixed berry- 1 pt. strawberries cut into ¼, 1 pt. blue berries
· Blueberry pomegranate- ½ pt. blueberries, 4 o.z pomegranate berries
· Pineapple- 1 pineapple, cleaned, sliced
· Cucumber-mint- 1 bunch mint, 2 cucumbers peeled, seeded, sliced
· Apple, cinnamon & rosemary- 1 rosemary stick, 3 Granny Smith apples sliced, 1 sprig picked rosemary 
· Mixed melon- ½ cantaloupe, ½ honey dew, ¼ small water melon all medium dice
· Kiwi Strawberry- 1 pt. strawberries cut ¼, 3 kiwis cut ¼
· Mango basil- 3 mangos, cleaned, diced, ½ bunch basil
· Rose water- 3 roses petals only

Steps

1. For each variety: Fill half of water container with ice. Fill with cold water. Add ingredients. Stir.

We use our Menu Forward idea to empower staff to develop menu items and keep leftovers in check. Product left at the end of service may be claimed by any station to become part of a new item within six weeks. I’m happy to see my star team fighting for their ideas and products; the benefit to food cost is spot-on, and my freezer has no mystery items lurking in the corner.
