Honey Glazed Fruit and Greek Yogurt Dessert Pita
Fruit and yogurt combine to make this sandwich a sweet treat. The pita features cantalope, honeydew, pineapple and grapes.
1⁄2 small seedless watermelon, peeled, diced
1⁄2 cantaloupe, peeled, seeded, diced
1⁄2 honeydew, peeled, seeded, diced
1⁄2 pineapple, peeled, cored, diced
Small bunch seedless grapes, stemmed
1⁄2 cup honey
1 lb. Greek yogurt
1 pt. sliced strawberries
24 4-in. wheat pitas
Chiffonade of mint for garnish
1. Mix together melons, pineapple and grapes with ¾ of honey. Fold in Greek yogurt and strawberries.
2. Slice pita pockets to open top and bottom but leave attached by cutting about halfway around. Brush lightly with remaining honey.
3. Fill pita with fruit mixture and serve sprinkled with mint.
