This rice dish is chock full of a great mix of fruit and vegetables. A little bit sweet and a little bit nutty, it makes a great side dish.
1 tbsp. vegetable oil
1 cup julienned carrots
1 cup sliced scallions
2 cups cored and chopped unpeeled apples
3 cups cooked brown rice
1⁄2 cup seedless raisins
1 tbsp. sesame seed
1⁄2 tsp. salt
1. Sauté carrots in oil in a large skillet over medium-high heat for 3-5 min. or until tender-crisp.
2. Add scallions and apples; cook 3-5 min. Stir in rice, raisins, sesame seeds, and salt. Cook, stirring 1-2 min. or until thoroughly heated.
