Hard-Cooked Egg and Blue Pimento Cheese Bagel

Breakfast customers crave variety … but not too much. An easy and tasty way to change up the usual toasted bagel is with a unique topping. Chef Michaels creates a riff on pimento cheese, then tops the whole-grain bagel with slices of egg, peppered bacon and baby arugula.

Ingredients

8 oz. aged white cheddar cheese, shredded
1/2 cup mayonnaise
1 tsp. Worcestershire sauce
1 clove garlic, minced
1 tbsp. minced shallots
1/4 tsp. ground white pepper
8 oz. crumbled Gorgonzola cheese
1/3 cup diced roasted red peppers
12 slices thick-cut peppered bacon
12 peeled, hard-cooked eggs, sliced
3 cups baby arugula
12 whole-grain bagels, split

Steps

  1. In mixing bowl, combine cheddar, mayonnaise, Worcestershire sauce, garlic, shallots and pepper. Whip with electric mixer until well combined and fairly smooth, about 2 minutes. Slowly stir in Gorgonzola and roasted red peppers; mix just until combined. (Cheese spread will be chunky.) Refrigerate until well chilled.
  2. Preheat oven to 350 F. Place strips of peppered bacon on parchment-lined baking sheet. Bake until bacon is crisp and browned, about 15 to 18 minutes. Cut in half and keep warm.
  3. Per serving, to order: Toast bagel. Cover bottom half of bagel with 3 tablespoons blue pimento cheese; top with 2 half slices bacon, 1/4 cup baby arugula and 1 sliced, hard-cooked egg. Cover with toasted bagel top. Serve immediately.

The University of Notre Dame in South Bend, Ind., will soon switch over from magnetic strip-based student ID cards to chip-based ones, The Observer reports.

Along with being more secure, the new cards will allow students easier access to dining halls, enabling them to simply tap their cards on a reader to gain entrance. Students will also be able to add flex points and Domer Dollars—which can be used at eateries on and off campus—to their accounts via a mobile app.

University of St. Thomas in St. Paul, Minn., has replaced a fajita bar in one of its dining halls with a superfoods bar, Tommie Media reports.

Aiming to provide more options for athletes and students with dietary restrictions, the new bar offers diners a choice of protein with a variety of toppings, such as beans, fruit, couscous and quinoa.

Reading Hospital in West Reading, Pa., is using robots to help deliver patient meals, BCTV reports.

The eight robots, named TUGs, will be used to transport meals from the hospital’s nutrition services department to patient floors at Reading HealthPlex for Advanced Surgical & Patient Care.

Moving at three miles per hour, the robots will follow preprogrammed routes to the HealthPlex, where room ambassadors will remove room service carts from the TUGs and deliver them to patients. The TUGs will then return to nutrition services with dirty dishes for cleaning.
