This salad is a great option during the hot summer months because of its refreshing raspberry vinaigrette dressing and greens with grapefruit, oranges, avocado and pine nuts.
1 bunch watercress, washed, trimmed
2 Florida grapefruits, peeled, sectioned
2 Florida oranges, peeled, sectioned
1 avocado, pitted, peeled, diced
1/2 cup red onion, sliced
1/2 cup fresh raspberries
1/4 cup pine nuts, toasted
2 tbsp. 100% Florida grapefruit juice
2 tbsp. raspberry vinegar
1 tsp. Dijon mustard
4 tbsp. extra-virgin olive oil
1. In large bowl, combine watercress, grapefruit, orange, avocado, onion, raspberries and pine nuts.
1. In small bowl, whisk together grapefruit juice, vinegar and mustard. Slowly whisk in oil until emulsified. Drizzle over salad; toss to coat.
